Curried pork shanks

Wow your family tonight with these slightly sweet curried pork shanks

Serves: 4 Preparation: 5 min Cooking: 2 hr 20 min

  • 45 ml (3 T) oil
  • 4 small pork shanks
  • 1 onion, sliced
  • 4 cloves garlic, finely chopped
  • 30 ml (2 T) fresh ginger, finely grated
  • 1 cinnamon stick
  • 5 cloves
  • 5 pods cardamom, crushed
  • 10 ml (2 t) chilli flakes
  • 10 ml (2 t) turmeric
  • 10 ml (2 t) garam masala
  • 400 g tin mangoes
  • 10 ml (2 t) sugar
  • 400 g tin coconut milk
  • 250 ml (1 c) water
  • 1 lemon, juiced
  • salt and pepper, to taste

Preheat oven to 180 °C

1. Heat the oil in an ovenproof pot over a medium heat. Brown the pork shanks until golden. Remove the shanks and place aside.

2. In the same pot add the onion, garlic and ginger and cook for 5 minutes until the onions are soft. Add the cinnamon, cloves, cardamom and chilli flakes and stir through until fragrant.

3. Return the shanks and add the turmeric and garam masala and cook for 2 minutes, then add the mango and sugar and combine. Stir in the coconut milk, half the water and the lemon juice.
