Delicious chicken and vegetable dish for the whole family

Who wants to spend hours in the kitchen cooking different meals for family members of different ages when one dish can be adjusted for everyone? Here’s a tasty recipe that quickly be adjusted for babies older than 7 months.

Chicken and vegetable dish

Makes 10-12 portions

Preparation time: 10 min

Cooking time: 40 min

You’ll need:

  • 4 chicken breasts with skin and bone
  • 1 onion, quartered
  • 1 garlic clove, roughly chopped
  • 2 carrots, cut into pieces
  • 1 stick of celery, cut into pieces
  • 1 potato or sweet potato, cut into pieces
  • 30 ml (2 T) olive oil
  • 125 ml (½ c) water or vegetable stock without salt
  • 60 ml (¼ c) natural yoghurt

Preheat the oven to 180 °C. Place the chicken in a greased oven dish. Place the onion, garlic, carrots, celery and sweet potato around the chicken and drizzle with olive oil and the vegetable stock. Place the dish in the preheated oven and bake for 30-40 minutes or until done.

For baby:

Cool completely, skim off the fat and remove the bones. Process the chicken, vegetables and yoghurt in a food processor. Place the food in 125 ml (½ c) containers with tight-fitting lids and freeze. Use within a month or two.

Remember:

  • Don’t add salt or stock to food intended for children under a year old because both are damaging to their kidneys. Instead use water or rooibos tea, which is packed with antioxidants.
  • Make a supply of wholesome baby food and freeze it.
  • Defrosting food: take the food out of the freezer the night before it is needed and leave in the fridge to defrost overnight.
