Easy mince and pasta

Serves 4 

40 ml olive oil

1 onion, coarsely chopped

1 clove garlic, chopped

1 carrot, grated

1 stick celery, coarsely chopped

500 g beef mince

1 can (410 g) chopped tomatoes

salt and freshly ground black pepper

20 ml chutney

60 ml chopped fresh parsley and oregano

250 g penne pasta, cooked

100 g Parmesan cheese, grated

fresh basil to garnish

1 Heat the olive oil in a saucepan and fry the onion, garlic, carrot and celery for a few minutes.

2 Stir in the mince and fry until just done.

3 Stir in the tomatoes, salt, pepper, chutney and herbs and allow to simmer for 10 minutes.

4 Stir the cooked pasta into the mince and sprinkle the cheese on top.

5 Garnish with fresh basil and serve hot.
