Egg and wheat salad

250 g cracked wheat

2 large gherkins

1 onion

2 ripe tomatoes, seeded

4 celery stalks

2 carrots, scraped

1 red pepper

25 ml finely chopped fresh parsley

25 ml finely chopped fresh coriander

25 ml finely chopped fresh mint

salt and freshly ground black pepper

100 ml dressing of your choice

2 hard-boiled eggs, finely chopped

Cook the wheat for 15 minutes or until just done.

Drain and set aside.

Dice the gherkins, onion, tomatoes, celery, carrots and red pepper.

Mix with the wheat and add the parsley, coriander, mint, salt, pepper and dressing.

Toss gently and garnish with the chopped egg.

TIP: Wheat is affordable, healthy and ideal for stretching a meal. It makes a delicious salad with a braai or served alone. The boiled eggs add substance and flavour to this wholesome salad.
