Eggless pancakes

No eggs required in this clever batter recipe.

Preparation time: 5 min Cooking time: 30 min Makes 14 pancakes

  • 250 ml (1 c) self-raising flour
  • 60 ml (¼ c) caster sugar
  • 2,5 ml (½ c) bicarbonate of soda
  • 375 ml (1½ c) milk
  • 20 g butter, melted
  • 5 ml (1 t) apple cider vinegar
  • 5 ml (1 t) vanilla essence
  • mixed berries and syrup to serve

1 Sift the flour, sugar and bicarbonate of soda in a bowl. Pour the milk, butter, vinegar and vanilla into the flour mixture and whisk until smooth.

2 Heat a non-stick pan on medium heat and lightly grease. Ladle 60 ml (¼ c) of the batter into the hot pan, cook for 2 minutes and turn over using a spatula. Cook for another 2 minutes. Transfer to a plate and repeat with the rest of the batter.

3 Top the pancakes with berries and drizzle with syrup.
