Fancy fish & chips

Serves 4

Cooking time: about 1 hour

CHIPS

6 large potatoes

salt and pepper

olive oil

FISH

1 kg hake, cut into pieces

salt and freshly ground

black pepper

80-100 ml cornflour

250 ml (1 c) self-raising flour

5 ml (1 t) salt

5 ml (1 t) curry powder

250 ml (1 c) beer

oil for deep frying

TARTARE SAUCE

100 ml mayonnaise

2 gherkins, chopped

1 small onion, chopped

salt and freshly ground

black pepper

10 ml (2 t) mixed

chopped herbs

1 CHIPS

Preheat the oven to 220 °C. Peel the potatoes and cut into wedges. Arrange the wedges in a large oven dish and season. Drizzle with olive oil and bake for about 45 minutes or until crisp and golden brown.

2 FISH

Season the fish and cover with cornflour. Shake off the surplus flour and set the fish aside.

Sift the self-raising flour, salt and curry powder together and add the beer. Mix with a wooden spoon until a slack batter forms.

Heat the oil in a deep pan. Dip the fish pieces in the batter and place them carefully in the heated oil. Fry until golden brown and done. Drain the fish on paper towels.

3 TARTARE SAUCE

Mix all the ingredients for the tartare sauce and serve with the fish and home-made chips.
