Fancy sandwiches

Pile on nutrition with multiple toppings on slices of bread. These sandwiches remind me of the triple-layered Dagwood sandwiches we used to buy at a late-night café in Stellenbosch.

FILLING IDEAS

Use various breads such as rye, ciabatta and low-GI seed bread.

Instead of butter or margarine spread the bread slices with smooth cottage cheese mixed with a little mayonnaise before adding the filling.

1 RYE BREAD 

Flake smoked mackerel or snoek and pile on top of the bread along with rocket, chopped onion and onion marmalade.

2 CIABATTA OR SOURDOUGH BREAD 

Toast the ciabatta slices and spread with cottage cheese mixed with a little mustard.

Top with slices of peppered ham and Delite cheese, piquant chillies and rocket.

3 LOW-GI SEED BREAD

Toast the bread slices and spread with cottage cheese mixed with a little mustard.

Pile lettuce leaves, fried bacon (with a thin fatty edge) and tomato slices on top.

Add a fried egg if desired.

VARIATION 

Spread ciabatta slices with basil pesto and top with mozzarella cheese and tomato slices.

Garnish with fresh basil.

TIP: If the packed lunch contains protein remember to add an ice-brick to the lunchbox to prevent the food from spoiling.
