Fennel fish with mash

Fish and fennel - always a perfect match

Serves 6

Preparation time: 5 min

Cooking time: 25 min (including the potatoes)

5 ml (1 t) fennel seeds

45 ml (3 T) olive oil

1 fennel bulb, sliced

2 garlic cloves, chopped

8 white fish fillets

juice of 1 lemon

salt and freshly ground pepper

handful of fennel leaves

mashed potatoes to serve

1    Toast the fennel seeds in a dry pan over low heat until aromatic, about 5 minutes. Cool and crush with a spice grinder or mortar and pestle.

2    Heat the oil in a frying pan and sauté the sliced fennel for 3 minutes or until browned. Add the garlic and remove from the pan.

3    Cook the fish in the same pan over medium heat for 5 minutes on each side and drizzle with the lemon juice. Season with salt and pepper and serve with the fennel, fennel leaves and mashed potatoes.
