Fish cakes with apple raita

The apple sauce brings out the flavour of the fish cakes

Makes 16 Preparation time: 15 min Cooking time: 20 min

500 g smoked oily fish such as snoek, angelfish or yellowtail,flaked and bones removed 3 medium potatoes, peeled, diced and cooked until soft salt and freshly ground blackpepper 60 ml (¼ c) chopped fresh coriander 2 eggs, lightly whisked 30 ml (2 T) lemon juice oil lemon wedges to serve

Mix the fish and diced potatoes and season with salt and pepper.

Add the shopped fresh coriander and whisked eggs, season with lemon juice and mix.

Shape the mixture into about 16 fairly large fish cakes and arrange them on a tray.

Chill for about 15 minutes to prevent them breaking while cooking.

Add a little oil to a heated pan and fry a few fish cakes at a time until golden on both sides.

Serve with apple raita (recipe below) and lemon wedges.

APPLE RAITA Makes about 250 ml (1 c) Preparation time: 5 min

2 large Granny Smith apples, peeled and cored 250 ml (1 c) mint leaves, stems removed and washed pinch of salt 1 clove garlic, peeled small pinch of green masala (curry) juice of ½ a lemon – about 45 ml (3 T) about 60 ml (¼ c) plain yoghurt

Put all the ingredients except the yoghurt in a food processor and blend.

Stir in the yoghurt and serve with the fish cakes.
