Flat bread with cheese

FLAT BREAD

600 g cake flour

10 ml salt

5 ml sugar

10 g packet instant yeast

160 ml olive oil

about 400 ml lukewarm water

6 garlic cloves, crushed

6 sprigs of rosemary

coarse salt and black pepper

Preheat the oven to 200 °C.

Grease a few baking sheets.

Put the flour, salt and sugar in a large bowl and sprinkle the yeast on top.

Add 30 ml of the olive oil.

Add half the water and mix with your hands.

Add more water a little at a time and knead until the mixture forms a soft, firm dough that no longer sticks to your hands.

Cover the bowl with clingfilm and leave the dough to rise in a warm place until it doubles in volume.

Knock down the dough and divide into six equal pieces.

Divide each into 4 small balls.

Mix the remaining olive oil, garlic and rosemary in a small dish. Roll out each ball on a floured surface and put it on a greased baking sheet.

Brush with the olive oil mixture and sprinkle with coarse salt and pepper.

Bake for 10 minutes or until the dough starts to puff up and is pale brown and crisp.
