Friday-night pizzas

Serves 4

500 g readymade bread dough

80 ml tomato paste

200 g Cheddar cheese, coarsely grated

200 g mozzarella cheese, coarsely grated

1 chorizo, cut into small cubes

250 g cherry tomatoes, halved

about 80 ml sweet chilli sauce

handful of fresh coriander

1 Preheat the oven to 200 °C and grease a large baking sheet with oil or nonstick spray. Sprinkle with flour.

2 On a floured work surface divide the dough into 4 equal-size balls. Allow to rise for about 20 minutes.

3 Roll out each dough ball very thinly and transfer to the prepared baking sheet.

4 Spread the tomato paste on the pizza bases and bake for 5 minutes.

5 Top the pizzas with the rest of the ingredients except the sweet chilli sauce and coriander and bake for another 5 to 10 minutes or until done.

6 Dot the pizzas with the sauce and sprinkle the coriander on top.
