Fried chicken

Chicken so good, even the "Colonel" will be envious!

Serves 4-6

Preparation time: 10 min

Cooking time: 20 min

oil for deep-frying

375 ml (1½ c) flour

15 ml (1 T) paprika

250 ml (1 c) buttermilk

salt and freshly ground black pepper

30 ml (2 T) hot sauce

30 ml (2 T) cayenne pepper

4 chicken breasts, butterflied

4 chicken drumsticks

hamburger rolls, lettuce, tomato and potato wedges to serve

1 Heat oil for deep-frying in a pot over medium heat.

2 In a large bowl mix the flour and paprika. In a separate bowl whisk together the buttermilk, salt, pepper, hot sauce and cayenne pepper.

3 Dip the chicken pieces in the flour to coat, then in the buttermilk. Allow the excess to drop off then dip back in the flour.

4 When the oil is hot enough, add a batch of chicken and fry, turning once or twice, until golden brown and cooked through. Remove from the oil with a slotted spoon and transfer to a rack or paper towels. Cook the remaining chicken pieces.

5 Serve with the rolls, lettuce, tomato and potatoes.
