Fruit platter with chilled mint syrup

All your favourite fruits come together in this colourful, irresistible recipe ¬– topped with a fresh, minty syrup.

All your favourite fruits come together in this colourful, irresistible recipe ¬– topped with a fresh, minty syrup. 

(Serves 8)

For the fruit salad you’ll need:

Pineapple

Pawpaw

Oranges

Strawberries

Blackberries

Watermelon

Sweet melon

Raspberries

Cherries

Granadilla

Cherries

½ cup fresh mint for garnish

For the minty syrup you’ll need:

60 ml lemon juice or white wine

250 ml water

150 ml sugar

½ cup mint leaves; roughly chopped

Place the ingredients for the syrup in a saucepan and bring to the boil. Boil until the syrup is reduced by a third or slightly thickened. Remove from the heat, strain and chill until needed. Drizzle the cut fruit with minty syrup.

TIP: garnish with thinly sliced mint leaves scattered over the surface of the fruit and serve.
