Garlicky lemon chicken

Every now and then you need to spend a little more time to prepare a fabulous meal such as this one

Serves 6

Preparation time: 15 min

Roasting time: 1 hour 10 min

1,5 kg whole chicken

50 g butter

zest of 1 lemon

6 garlic bulbs

salt and pepper

2 lemons, sliced

6 baby onions

4 carrots

8 sprigs of thyme

250 ml (1 c) chicken stock

1    Preheat the oven to 200 °C.

2    Mix the butter with the lemon zest, 2 garlic cloves, salt and pepper.

3    Pat the chicken dry and rub half the butter mixture under the chicken skin that covers the breast and the rest over the chicken.

4    Stuff the chicken cavity with the lemon slices and the rest of the garlic. Truss the legs with kitchen string.

5    Arrange the onions and carrots in a roasting pan, put the chicken on the vegetables, breast side up, pour in the chicken stock and scatter the thyme over.

6    Roast for 30 minutes, turn the chicken using tongs and roast for a further 20 minutes. Turn again and continue roasting until the chicken is golden and the juices run clear.

7    Transfer the chicken to a serving platter with the vegetables.
