Golden syrup pudding

Enjoy this sweet pudding piping hot with thick cream or custard.

Serves 6 Preparation: 5 min Cooking: 45 min

  • 200 ml (¾ c) brown sugar
  • 310 ml (1¼ c) self-raising flour
  • 100 g butter, melted
  • 1 egg
  • 125 ml (½ c) milk
  • 60 ml (¼ c) golden syrup
  • 15 ml (1 T) cornflour
  • 375 ml (1½ c) boiling water

Preheat the oven to 180 °C. Grease an ovenproof dish.

1. Combine 60 ml (¼ c) of the brown sugar and all the flour in a bowl. Add the melted butter, egg, milk and 30 ml (2 T) golden syrup and stir until combined. Spoon into the greased dish.

2. Combine the remaining sugar and cornflour. Sprinkle over the pudding mixture.

3. Combine the boiling water with the remaining golden syrup. Pour over the top of the pudding mixture and bake for 40 minutes or until a skewer inserted into the centre comes out clean. Serve with double cream or ice cream.
