Granadilla crumble cake

We think you should make two of these at the same time for more seconds to go around - it's beyond delicious

Preparation time: 10 min

Baking time: 40 min

Serves: 6

375 ml (1½ c) icing sugar

125 ml (½ c) flour

5 ml (1 t) ground cinnamon

100 g ground nuts

185 g butter, melted

6 egg whites

2 x 115 g granadilla pulp

15 ml (1 T) caster sugar

Crumble

30 ml (2 T) caster sugar

125 ml (½ c) flour

40 g butter

50 g flaked nuts

1 orange zest

1. Crumble Mix sugar and flour together until well incorporated. Rub in butter using your fingertips until mixture seems like breadcrumbs. Add flaked nuts and orange zest until combined.

2. Preheat oven to 180 °C. Grease a square cake tin and line with baking paper. Sieve sugar, flour, cinnamon and ground nuts into a bowl.

3. Stir in butter and egg whites until combined. Spoon into cake tin, scatter with half crumble, then granadilla, then crumble again. Sprinkle sugar and bake for 40 minutes or until done.
