Happiness and tangy lemon curd

Ooh la summer! If I may be so bold, I like to think that these lemon curd ice cream sandwiches are a thing of great beauty. They’re exquisitely simple, but utterly adorable. The creamy lemon curd ice cream (tastes like cheesecake ice cream said my friend Lucy) squidged between two gloriously golden and crumbly rosemary cookies is, (with any penchant for the dramatic aside) well, ethereal.

And as with so many recipes of this nature, it’s wonderfully beguiling and ever so obliging, with endless fun variations. I mean, once you’ve mastered these (which will be in a jiffy) what’s to stop you from making chocolate cookies instead of my simple rosemary butter versions, with a peanut butter chocolate ice-cream filling; or swop out the lemon curd filling for passion fruit or orange curd and add a touch of ginger.

What's more, they lend any occasion an air of “party-ness”, and leave any ice cream and cookie loving individual swooning. This was one of my very favourite recipes last year, which is also a highlight in my next book, smitten (in stores February 2014).

Lemon curd ice cream sandwiches

Serves 4-6

Preparation time: 15 minutes

Freezing time: minimum 3 hours

WHAT YOU’LL NEED

250ml cream

¼ cup icing sugar

4 Tbsp lemon curd, at room temperature (store bought is fine)

2 tsp lemon zest

1 Tbsp lemon juice

10-12 cookies, I used homemade rosemary cookies made in a heart shape.

WHAT TO DO

1. Whip the cream until thick and forming stiff peaks. Sift the icing sugar into the cream. Gently fold in the lemon curd, zest and juice, so as not to mix out all the air. Taste to see that the flavours balance for you, if too tart add a little more icing sugar.

2. Pour into an airtight container and place in the freezer for at least 3 hours.

3. Sandwich between cookies to make lemon curd ice cream sandwiches or serve in cones or bowls. Yum!
