Health burgers

You can braai the burgers for even more flavour. The patties can be frozen (slip sheets of wax paper between them) so you have a quick meal on hand.

Serves 6

Preparation time: 20 min

Cooking time: 15-20 min

BURGER PATTIES

500 g lean mince

1 medium-size onion, grated

1 ripe tomato, diced

1 small green pepper,

seeded and diced

1 small celery stalk, finely chopped

50 g tomato soup powder

250 ml (1 c) oats

60 ml (¼ c) bran

3 eggs, whisked

salt and freshly ground black pepper

oil for frying

TO FINISH

250 ml (1 c) grated

Cheddar cheese

ciabatta or wholewheat rolls, halved but not cut all the way through

tomato slices

baby spinach, rocket or lettuce leaves

mayonnaise

BURGER PATTIES

Mix the mince, onion, tomato, green pepper, celery, soup powder, oats, bran and eggs.

Season with salt and pepper and leave to stand for a few minutes.

Mix well with your hands.

Shape the mixture into large patties.

Heat a little oil in a heavybased or griddle pan and cook the hamburgers over low heat until done to your liking.

TO FINISH

Sprinkle the cheese evenly on top of the patties.

Arrange the tomato slices and spinach, rocket or lettuce leaves on the bottom half of each ciabatta or roll and put a hamburger patty on top.

Spoon a dollop of mayonnaise on each.
