Hot beetroot and feta salad

Serves 4

Preparation time: about 15 minutes

Cooking time: 20-30 minutes

8 small beetroots

salt and freshly ground black pepper

oil for drizzling

200 g feta cheese, roughly crumbled

100 g baby spinach leaves

30 g rocket

salad dressing of your choice

1 Preheat the oven to 180 °C.

2 Scrub the beetroots until clean and wrap each in a piece of aluminium foil.

3 Place the foil packages on a baking sheet and bake for 20-30 minutes or until the beetroots are tender.

4 Remove the foil and halve each beetroot. Set aside to cool.

5 Shred the spinach and rocket leaves, moisten them with olive oil and season with salt and pepper.

6 Arrange the beetroot halves and feta cheese on the shredded spinach and rocket and sprinkle with salad dressing.
