Korean spareribs

Preparation time: 5 min

Braai time: 2-3 hours

Heat: low

BRAAI MARINADE

half a green pear, cored but unpeeled

125 ml (½ c) water

60 ml (4 T) soy sauce

45 ml (3 T) sesame oil

15 ml (1 T) rice vinegar

15 ml (1 T) teriyaki sauce

3 cloves garlic, cleaned

handful chopped parsley or coriander

MEAT

1 pork rib and belly

salt and pepper

SAUCE 

Blitz the sauce ingredients in a food processor, pour it over the meat and marinate for at least 1 hour.

MEAT 

Season lightly with salt and pepper and put high above low-heat coals, fatty side downwards. Braai for about 1 hour, turn and braai until done.

Baste with leftover marinade after cooking.

Sesame salt

45 ml (3 T) sesame seeds

5 ml (1 t) sea salt flakes

Toast the sesame seeds in a dry pan until golden brown.

Mix with the sea salt. Use as a dipping salt with the meat.
