Lamb kofta subs with honey and mustard sauce

Kofta is a wonderful fragrant Middle Eastern and South Asian meatball

Preparation time: 15 min

Cooking time: 20 min

Serves 4-6

500 g (2 c) lamb mince

5 ml (1 t) ground cumin

5 ml (1 t) ground coriander

1 ml (¼ t) ground cinnamon

10 ml (2 t) smoked paprika

salt and freshly ground black pepper

2 baguettes

lettuce leaves

2 firm tomatoes, sliced

½ cucumber, sliced

SAUCE

45 ml (3 T) mayonnaise

15 ml (1 T) wholegrain mustard

2,5 ml (½ t) crushed garlic

Preheat the oven to 190°C.

  1. In a large bowl add the mince, cumin, coriander, cinnamon, paprika, salt and pepper. Mix all the ingredients well together. Form small balls and refrigerate for 30 minutes.
  2. Mix the ingredients for the sauce and set aside, preferably in the fridge.
  3. Place the koftas on a baking sheet and bake for 20 minutes or until cooked.
  4. Cut each baguette into 3 pieces and then cut each piece on the top open. Place the lettuce leaves, tomato, cucumber and then the koftas inside the bread. Pour over the sauce and serve.
