Layered pear and root vegetable pie

Adding fruit to a dish is a great way of changing the ordinary into the extraordinary

Serves 6

Preparation time: 15 min

Cooking time: 1 hour

60 ml (¼ c) butter

5 turnips, peeled and thinly sliced

5 garlic cloves, crushed

5 ml (1 t) fresh thyme

salt and pepper

2 potatoes, peeled and sliced

2 pears, peeled and sliced

1 Heat the oven to 180 °C.

2 In a nonstick pan with an ovenproof handle melt a little of the butter, swirling it to coat the bottom and sides. Remove from the heat.

3 Arrange half the turnip slices in overlapping circles, covering the bottom of the pan. Press to compress. Sprinkle with half the garlic and thyme, season with salt and pepper and dot with butter.

4 Arrange the potato slices in tight overlapping circles over the turnips and press down. Sprinkle with the rest of the garlic and thyme, season with salt and pepper and dot with butter. Top with the pear slices and dot with butter.

5 Grease foil on one side and cover the pan with the foil, greased side down. Transfer to the oven and bake for 1 hour or until the vegetables are cooked, pressing the top down occasionally.

6 Remove the pan from the oven and allow to stand on a wire rack for 15 minutes before serving.
