Lemon and herb chicken

Serves 4-6

Preparation time: 20 min

Baking time: about 1 hour

1 large chicken

salt and freshly ground black pepper

about 60 ml olive oil

30 ml chopped parsley

30 ml chopped rosemary

4 cloves of garlic, finely chopped

juice and zest of 2 lemons

1. Preheat the oven to 180 °C and grease a roasting tin with oil or nonstick spray.

2. Using a large knife to cut through the breastbone, butterfly the chicken and splay it open on its back.

3. Dislocate the drumsticks and wings and flatten the chicken.

4. Season the chicken on both sides (inside and out) and put it in the prepared roasting tin.

5. Mix the remaining ingredients and brush the chicken on both sides with the mixture.

6. Roast the chicken for 40-50 minutes or until done, basting it with the pan juices. Serve with mashed potatoes and broccoli.
