Lemon tiramisu

Sweet seduction with a tangy twist.

Serves 6 or more Preparation time: 10 min Cooking time: 5 min Chilling time: 1 hour

SYRUP

  • juice of 2 lemons
  • 60 ml (¼ c) sugar
  • 250 ml (1 c) water

TIRAMISU

  • 200 g boudoir biscuits
  • 500 g mascarpone cheese
  • 125 ml (½ c) double cream
  • 60 ml (¼ c) caster sugar
  • juice and zest of 3 lemons
  • grated chocolate and extra lemon zest to garnish

1 Syrup: Bring the lemon juice, sugar and water to the boil in a small saucepan, stirring for 5 minutes or until the sugar has dissolved. Remove from the heat and cool slightly.

2 Tiramisu: Dip the biscuits in the syrup one at a time and lay them in the bottom of a dish.

3 Whisk together the mascarpone, cream, caster sugar, lemon juice and zest.

4 Top the biscuits with a layer of the mascarpone mixture. Repeat the biscuit and mascarpone layers and garnish with grated chocolate and lemon zest. Chill in the fridge for 1 hour before serving.
