This crustless quiche is a tasty way to feed your family lots of veggies.

MAKES 4-6 MINI-QUICHES

Preparation time: 15 min

Baking time: 35-40 min

INGREDIENTS 

15 ml (1 T) olive oil

2 onions, finely chopped

2 garlic cloves, crushed

125 g (½ packet) bacon, diced

200 g spinach, chopped

200 g baby marrows, grated

200 g ricotta cheese, crumbled

200 g Cheddar cheese, grated

60 ml (¼ c) finely chopped

fresh parsley

salt and black pepper

6 eggs

250 ml (1 c) self-raising flour, Sifted

TO COMPLETE

1 Preheat the oven to 180 °C. Grease a 20 cm square cake tin or 3 small pie tins.

2 Heat the oil and stir-fry the onions, garlic and bacon until golden.

3 Mix the onion and bacon mixture, spinach, baby marrows, ricotta cheese, Cheddar cheese and parsley. Season with salt and pepper.

4 Whisk the eggs and add to the vegetable mixture. Mix in the flour and turn the mixture into the prepared tin/s. Bake for 35-40 minutes or until golden and done. Cool completely.

5 If baking a large quiche, cut it into squares.

TIP Freeze the leftovers.
