Most kids are crazy about mashed potatoes and with the new Low GI Carisma potatoes from Checkers  you can make this old favourite in a healthier way. Try this delicious YOU recipe.

  • Preparation time: 5 min
  • Cooking time: 30 min
  • Serves: 4

You’ll need:

  • 6 rashers of streaky bacon
  • 500 g baby potatoes, halved
  • salt and pepper, to taste
  • 250 ml (1 c) double cream
  • 60 ml (¼  c) chives
  • 125 ml (½  c) cheddar cheese

Do this:

  1. Preheat the oven to 180 °C.
  2. Arrange the bacon on a baking sheet and bake for 12 minutes or until crisp.
  3. Put the potatoes in a medium pot, cover with salted water and simmer for 15 minutes or until soft.
  4. Drain and mash the potatoes, adding the cream.
  5. Season with salt and pepper.
  6. Stir in chives, cheese and chopped bacon.
