Mashed potato

Turn regular mash into a marvelous treat with a few extra ingredients

Preparation time: 5 min

Cooking time: 30 min

Serves: 4

6 rashers of streaky bacon

500 g baby potatoes, halved

salt and pepper, to taste

250 ml (1 c) double cream

60 ml (¼  c) chives

125 ml (½  c) cheddar cheese

Preheat the oven to 180 °C.

Arrange the bacon on a baking sheet and bake for 12 minutes or until crisp.

Put the potatoes in a medium pot, cover with salted water and simmer for 15 minutes or until soft.

Drain and mash the potatoes, adding the cream.

Season with salt and pepper.

Stir in chives, cheese and chopped bacon.
