Mayonnaise chicken bake

Serves 4 

8 chicken portions

salt and freshly ground black pepper

30 ml (2 T) olive oil

30 ml (2 T) chopped parsley

100 ml mayonnaise

100 ml yoghurt

juice and zest of one lemon

100 g baby spinach leaves

1 Preheat the oven to 180 °C.

2 Season the chicken portions with the salt and pepper and heat the oil in a pan.

3 Fry the chicken portions until golden brown and place them in a large oven dish.

4 Mix the parsley, mayonnaise, yoghurt and the juice and zest of the lemon and spoon over the chicken.

5 Cook for 30-40 minutes or until done.

6 Shred the spinach leaves and serve with the chicken.
