Mayonnaise chocolate cake

This easy to make cake loaf will take you less than an hour to make.

MAKES 2 SMALL LOAVES

(8 SERVINGS EACH)

Preparation time: 20 min

Baking time: 40-50 min

CAKE

500 ml (2 c) cake flour

180 ml (3/4 c) cocoa powder

10 ml (2 t) baking powder

15 ml (1 T) bicarbonate of soda

pinch of salt

3 large eggs

400 ml sugar

5 ml (1 t) vanilla essence

250 ml (1 c) good-quality

mayonnaise

330 ml water

TOPPING 1 can (360 g) caramel condensed milk Preheat the oven to 180 °C. Grease 2 small 20 x 12 cm loaf tins. Dust with flour.

  1. Sift the dry ingredients and set aside.
  2. Whisk the eggs, sugar and essence until pale and thick. Add the mayonnaise and beat until mixed. Mix in the dry ingredients, alternating with the water.
  3. Spoon the batter into the tins and bake for 40-50 minutes or until a skewer inserted in the middle comes out clean. Cool in the tins for about 10 minutes. Turn out onto a wire rack to cool completely.
  4. TOPPING Spread caramel over the loaves.
