Meatless Monday: Rice Wraps

It's Meatless Monday - and it's a wrap!

Makes 8

Preparation time: 15 min

RICE

500 ml (2 c) Spekko brown rice, cooked (1 c uncooked makes 3½ c cooked)

80 ml (? c) chopped fresh coriander

125 ml (½ c) Greek yoghurt

5 ml (1 t) chilli flakes (optional)

grated zest of 1 lemon

salt and pepper

WRAPS

8 sheets rice paper

½ cucumber, cut into matchsticks

1 yellow pepper, sliced

Rice: Mix all the ingredients and set aside.

Wraps: Soak the rice paper in a little water until it’s pliable and immediately start assembling the wraps.

Pack the cucumber and pepper pieces on the softened rice paper and add a spoonful of the rice mixture. Roll up like a spring roll, cut in half and serve.
