Mediterranean chicken bake

This delicious baked chicken and vegetable meal is great for those following a Banting diet.

Serves 4 Preparation: 10 min Cooking: 45 min

4-6 chicken pieces

salt and freshly ground pepper

4 garlic cloves, crushed

15 ml (1 T) dried mixed Italian herbs

1 whole garlic bulb

250 g mixed mushrooms

250 g cherry tomatoes

15 ml (1 T) olive oil

handful of fresh basil

Heat the oven to 190 °C.

1 Season the chicken pieces with salt and pepper and rub with the crushed garlic and dried herbs.

2 Cut the garlic bulb in half and put in the bottom of a roasting pan. Arrange the chicken on top and bake for 30 minutes.

3 Arrange the mushrooms and cherry tomatoes among the chicken pieces and drizzle the olive oil over. Bake for another 15 minutes or until the chicken pieces are golden and done.

4 Scatter fresh basil on top and serve with sweet corn.
