Mexican corn on the cob

This is a real crowd-pleaser - and it takes just over half an hour to prepare!

Serves 4-6

Preparation time: 5 min

Cooking time: 35 min

8 sweetcorn cobs

60 ml (¼ c) butter, melted

salt and pepper

45 ml (3 T) mayonnaise

5 ml (1 t) chilli powder

60 ml (¼ c) grated Parmesan cheese

2 spring onions, chopped

1.    Preheat the oven grill.

2.    Heat water in a large pot over medium heat. Add the corn and boil for 30 minutes.

3.    Transfer to a plate, brush with the butter and grill until charred.

4.    Smear with the mayonnaise and sprinkle with the chilli powder and Parmesan cheese. Garnish with the spring onions and serve
