Microwave sweet and sour pork

A great way to serve leftover pork – make a quick sauce in the microwave, stir in the meat and you have a meal in minutes.

Serves 4 Preparation: 5 min Cooking: 2 min

30 ml (2 T) tomato sauce

15 ml (1 T) soy sauce

15 ml (1 T) sugar

30 ml (2 T) white wine vinegar

15 ml (1 T) cornflour

1 red chilli, chopped

1 green chilli, chopped

100 g pineapple, peeled and cubed

60 ml (¼ c) water

200 g pork fillet, cooked

rice and finely shredded spring onion to serve

1 In a microwave-safe bowl, mix the tomato sauce, soy sauce, sugar, vinegar and cornflour. Microwave on full power for 30 seconds.

2 Stir in the chillies and pineapple and microwave on full power for 30 seconds.

3 Add the water and stir in the pork. Microwave on full power for 1 minute or until the sauce is thick. Serve on rice and garnish with spring onion.
