Mini cheese breads

A very special treat with very little effort - make it today!

Makes 12 mini loaves Preparation time: 10 min Baking time: 1 hour

  • 1 litre (4 c) self-raising flour
  • 250 g Cheddar cheese, grated
  • 250 ml (1 c) frozen corn
  • 500 ml (2 c) maas
  • 1 onion, chopped
  • 125 g bacon, chopped
  • handful of chives, chopped
  • ½ handful of thyme, chopped

1    Preheat the oven to 180 °C. Grease 12 mini loaf tins or 1 large loaf tin.

2    Mix the flour, most of the cheese (reserve a little for sprinkling on top), corn, maas, onion and bacon in a bowl.

3    Spoon the dough into the prepared tin(s) and top with the reserved cheese.

4    Bake for about 1 hour or until golden and cooked through. Serve garnished with the chopped chives and thyme.
