Mini jam doughnuts

Decadent, delicious and an absolute treat - why not make them today?

Makes about 20

Preparation time: 10 min

Cooking time: 25 min

310 ml (1¼ c) flour

80 ml (? c) sugar

10 ml (2 t) baking powder

2 ml (½ t) nutmeg

2 ml (½ t) cinnamon

pinch of salt

125 ml (½ c) milk

1 egg

30 ml (2 T) melted butter

oil for deep-frying

caster sugar for coating

strawberry jam to fill

1 In a large bowl combine the flour, sugar, baking powder, nutmeg, cinnamon and salt. In a jug mix the milk, egg and butter together. Pour over the flour mixture and whisk until well incorporated. Transfer to a piping bag.

2 Half-fill a pot with oil for deep-frying and heat over medium heat. When the oil is hot, carefully pipe small amounts of the dough into the oil and cook for 3 minutes or until golden and cooked through.

3 Roll in caster sugar and set aside to completely cool. Repeat with the rest of the dough.

4 When cooled, slice the doughnuts open in the middle and spoon in a little strawberry jam.
