Mocha chocolate fudge cake

This mocha chocolate fudge cake is the perfect blend of creamy coffee flavour and the sugary chocolate sweetness! Thanks to Theuns Botha from Port Elizabeth for the recipe!

MAKES 2 LARGE LOAVES (10-12 SERVINGS EACH) Preparation time: 15 min Baking time: 55 min

CAKE

  • 750 ml (3 c) cake flour
  • 65 g cocoa powder
  • 7 ml (1½ t) bicarbonate of soda
  • 5 ml (1 t) baking powder
  • 5 ml (1 t) salt
  • 375 ml (1½ c) white sugar
  • 250 ml (1 c) brown sugar
  • 3 large eggs
  • 310 ml (1¼ c) buttermilk
  • 10 ml (2 t) vanilla essence
  • 50 g dark chocolate, broken into squares and melted
  • 160 ml (²/³ c) sunflower oil
  • 310 ml (1¼ c) strong black coffee

ICING

  • 500 g softened butter
  • 50 g dark chocolate, broken
  • into squares and melted
  • 650 g icing sugar, sifted
  • 45 ml (3 T) cocoa powder
  • 10 ml (2 t) vanilla essence

Grease two 20 x 12 cm loaf tins with nonstick spray and line with baking paper.

1 cake Sift the dry ingredients and stir in the white and brown sugar.

2 Whisk the eggs, buttermilk, vanilla essence, melted chocolate, sunflower oil and coffee.

3 Gradually add the dry ingredients to the egg mixture and beat to incorporate well.

4 Spoon the batter into the tins and bake for 55 minutes or until a skewer inserted in the middle comes out clean.

5 Leave to cool in the tins for 10 minutes then turn out onto a wire rack to cool completely. Trim the tops of the cakes to level them if necessary.

6 ICING Cream the butter well, add the melted chocolate, icing sugar, cocoa powder and vanilla essence. Beat well until pale and thick. Spread icing on both loaves.
