Moist chocolate brownie pudding

Bake traditional brownies in cups and serve them as dessert.

Serves 4-6 Preparation time: 15-20 min Baking time: 20-25 min

  • 125 g butter
  • 300 ml caster sugar
  • 2 eggs
  • 5 ml (1 t) vanilla essence
  • 10 ml (2 t) liqueur
  • 200 g dark chocolate, melted
  • 270 ml flour
  • 5 ml (1 t) baking powder
  • 30 ml (2 T) cocoa powder
  • 300 g mixed nuts, roughly chopped
  • extra cocoa powder for dusting

1 Preheat the oven to 180 °C and grease 4 to 6 ramekins or cups with melted butter.

2 Using an electric beater cream together the butter and caster sugar for 10 minutes.

3 Add the eggs to the butter mixture one at a time and beat until well mixed.

4 Add the vanilla essence, liqueur and chocolate and mix gently.

5 In a separate bowl sift together the dry ingredients and fold into the egg mixture. Fold in the nuts.

6 Turn the batter into the ramekins and bake for 20 to 25 minutes.

7 Dust with the extra cocoa powder and serve hot.
