Moroccan Pork Kebabs with Cinnamon Couscous

Savour the exotic flavours of North Africa with Moroccan-spiced pork, served on a bed of fluffy, fragrant couscous.

Savour the exotic flavours of North Africa with Moroccan-spiced pork, served on a bed of fluffy, fragrant couscous. 

You'll need:

45ml (3 tbsp) vegetable oil

5ml (1 tsp) paprika

2ml (½ tsp) ground cinnamon

500g lean pork fillet,? diced

250g couscous

400ml boiling water

20g fresh parsley, chopped

Combine 30ml (2 tbsp) of the oil with the paprika and half the cinnamon. Mix with the pork in a non-metal bowl, cover and marinate for 30 mins. Preheat the oven grill. Thread the pork onto 8 skewers and grill for 15 - 20 minutes, turning occasionally until cooked through. Meanwhile put the couscous in a large bowl, add the remaining cinnamon and oil and season. Pour over the boiling water, cover and leave to stand for 5 mins. Fluff with a fork then stir in the parsley. Serve with the pork kebabs.
