Omelette

Making an omelette is very easy, making a great omelette requires just a few more steps and ingredients

Preparation time: 10 min

Cooking time: 15 min

Makes: 3

10 ml (2 t) oil

1 chorizo sausage, sliced

100 g mushrooms, sliced

8 eggs

15 ml (1 T) butter

handful pea shoots

salt and pepper to taste

  1. Preheat the oven on grill. In an oiled pan on medium heat cook the chorizo for 2 minutes, then add the mushrooms and cook for 5 minutes or until the mushrooms are done.
  2. Separate the eggs and whisk the egg whites until a soft peak has formed. Whisk the yolks and fold the whites into the yolks, mixing in a spoon at a time. Add butter to a nonstick pan over medium heat. When hot, pour in the egg mixture.

Cook for 2 minutes on the stove and place in the oven for 3 minutes. Arrange the chorizo, mushrooms and pea shoots in the centre of the omelette and fold over. Season to taste and serve immediately.
