One-pot lentil and sausages

Most likely one of the preferred ways of cooking for those who don't really enjoy cooking but love spoiling loved ones: the one-pot solution!

Serves 6

Preparation time: 10 min

Cooking time: 25 min

15 ml (1 T) oil

1 onion, chopped

2 carrots, chopped

2 leeks, chopped

3 garlic cloves, chopped

30 ml (2 T) tomato paste

2 cans (400 g each) lentils, drained

1 can (410 g) whole peeled tomatoes

500 g beef sausages

100 g baby spinach

1 Heat the oil in a large frying pan over medium heat, add the onion, carrots, leeks and garlic cook, stirring, for 5 minutes or until soft. Add the tomato paste, lentils and tomatoes. Bring to the boil and simmer over low heat until the vegetables are almost cooked.

2 Meanwhile cook the sausages in a separate frying pan, turning occasionally, until almost done.

3 Add the sausages to the lentils and simmer for 10 minutes. Stir in the spinach and cook for 2 minutes or until the spinach has wilted.
