One-pot wonder

This one-pot wonder will warm up even the chilliest of days.

Serves: 6 Preparation: 10 min Cooking: 1 hr

  • 1 onion, chopped
  • 2 celery sticks, chopped
  • 30ml (2 T) olive oil
  • 15 ml (1 T) harissa paste
  • 5 ml (1 t) ground cinnamon
  • 5 ml (1 t) ground ginger
  • 5 ml (1 t) paprika
  • 5 ml (1 t) brown sugar
  • 410 g chopped tomatoes
  • 500 ml (2 c) vegetable stock
  • 125 ml (½ c) rice, uncooked
  • 400 g chickpeas, drained
  • 400 g lentils, drained
  • 400 g butter beans, drained
  • handful parsley, chopped
  • handful coriander, chopped
  • salt and pepper to taste

1. In a large pot, sauté the onion and celery in the olive oil. Add the spices, sugar, tomatoes, stock and the rice and cook for 20 minutes or until the rice is soft and cooked.

2. Add the chickpeas, lentils and beans and bring to the boil. Reduce the heat and simmer for 40 minutes.

3. Stir in the parsley, coriander and seasoning.
