Orange cake

A fragrant sweet offering - the perfect reason to invite some friends over for a little celebration

Serves 8-10

Preparation time: 15 min

Baking time: 45 min

125 g unsalted butter

15 ml (3 T) orange zest

250 ml (1 c) caster sugar

3 eggs

500 ml (2 c) self-raising flour

125 ml (½ c) maas

ORANGE SYRUP

juice of 3 oranges

30 ml (2 T) honey

4 cardamom pods, bruised

1    Preheat the oven to 180 °C. Grease a 20 cm cake tin and line with baking paper.

2    Beat together the butter, orange zest and sugar until the mixture is thick and creamy, about 2 minutes.

3    Add the eggs, one at a time, beating well after each addition. Gently fold in the flour and maas until just incorporated.

4    Pour the batter into the prepared tin and bake for 45 minutes, or until golden and a skewer inserted in the middle comes out clean. Remove from the oven, prick holes all over the top and allow cool.

5    Syrup: Simmer the ingredients in a small saucepan until the honey has dissolved. Allow to cool slightly then pour over the cooled cake and serve.
