Ostrich Scotch eggs

What a novel way to prepare a wonderful light meal

Serves 4

Preparation time: 15 min

Cooking time: 20 min

4 eggs

300 g ostrich mince

5 ml (1 t) thyme

1 onion, finely chopped

salt and freshly ground black pepper

125 g flour

1 egg, whisked

125 g breadcrumbs

oil for deep-frying

1 Put the eggs in salted water and bring to the boil. Reduce the heat and to simmer for 9 minutes. Allow to cool then shell.

2 Meanwhile mix the mince with the thyme and onion in a bowl and season with salt and pepper.

3 Divide the mince into four, roll each into a ball and flatten on a clean surface to form discs.

4 Put the flour on a plate. Roll the eggs in the flour to coat and put one in the middle of each mince disc. Wrap the egg in the mince, making sure it’s completely covered.

5 Dip each Scotch egg in the egg then roll in the breadcrumbs to coat.

5 Heat oil in a deep saucepan. When hot, fry the eggs for 8-10 minutes or until golden. Remove with a slotted spoon and drain on paper towels.
