Ostrich steak burgers

Bring it on! An awesome ostrich burger ready in just half an hour

Serves 4

Preparation time: 5 min

Cooking time: 25 min

BEETROOT

1 onion, chopped

80 ml (? c) brown sugar

60 ml (¼ c) red wine vinegar

125 ml (½ c) water

pinch of cinnamon

3 beetroot, cooked and diced

BURGER

4 ×120 g ostrich steaks

oil for frying

100 g bacon rashers

60 ml (¼ c) white cheddar cheese

4 rolls, halved

1 Beetroot: Combine the onion, sugar, vinegar, water and cinnamon in a saucepan over medium heat. Cook for 5 minutes, add the beetroot and cook for a further 10 minutes.

2 Burger: Season the steaks with salt and pepper. Heat a griddle pan over high heat and cook the steaks for 5 minutes on each side. Set aside to rest.

3 Add the bacon to the pan and cook until done. Put the cheese on the bottom halves of the rolls and add the hot steak, bacon and beetroot. Cover with the top halves of the rolls.
