Ostrich with fruity cabbage

A magical meal in less than an hour - guaranteed to become a firm family favourite

Serves 4-6

Preparation time: 15 min

Cooking time: 30 min

CABBAGE

½ red cabbage, shredded

3 beetroot, grated

1 red onion, chopped

3 apples, grated

125 ml (½ c) strawberry jam

80 ml (? c) sugar

80 ml (? c) apple cider vinegar

250 ml (1 c) apple juice

MEAT

15 ml (1 T) oil

500 g ostrich goulash cubes

3 rosemary sprigs

salt and freshly ground black pepper

1    Put all the cabbage ingredients in a pot and cook, covered, over low heat, stirring occasionally, for 30 minutes or until the liquid has reduced.

2    In an oiled pan over high heat brown the ostrich cubes for 5 minutes. Strip the rosemary leaves from the stalks and add to the ostrich. Season with salt and pepper.

3    Serve the meat with the cabbage.

TIP: The cabbage can be stored in sealed jars in the fridge for up to 3 days.
