Pap and wors pizza

A delicious pizza with a traditional twist - bring it on!

Serves 4-6

Preparation time: 15 min

Baking time: 20 min

500 ml (2 c) pap

200 g soft mozzarella cheese, thinly sliced

200 g boerewors, sliced into small pieces and cooked

250 g baby tomatoes

2 cloves garlic, crushed

60 ml (¼ c) olive oil

salt and freshly ground pepper

handful of rocket

45 ml (3 T) balsamic reduction

1    Preheat the oven to 190 °C.

2    Cook the pap according to the packet instructions. Immediately turn the hot pap into 4 well-oiled 20 cm pizza pans or springform cake pans or onto a rectangular baking tray. Spread into an even layer – if it’s too thick use a metal spatula dipped in boiling water.

3    Top the pap with the cheese, sausage pieces and tomatoes. Mix the garlic and oil and drizzle over the pizza. Season with salt and pepper.

4    Bake for 20 minutes or until slightly browned and the tomatoes are wrinkly. Serve immediately, garnished with rocket and drizzled with the balsamic reduction.
