Pasta bake with basil pesto

Try this easy, tasty pasta dish for a meat-free Monday!

Serves 4

Preparation time: 15 min

Cooking time: 25 min

PESTO

30 g basil leaves

3 garlic cloves

20 g peanuts

180 ml (¾ c) grated Parmesan cheese

45 ml (3 T) olive oil

PASTA BAKE

salt

300 g elbow pasta

125 ml (½ c) breadcrumbs

250 ml (1 c) grated pecorino cheese

1        Preheat the oven to 200 °C.

2        Blitz the pesto ingredients in a food processor to a thick paste.

3        Pasta bake: Bring a large pot of salted water to the boil over high heat. Add the pasta and cook until just done. Drain and rinse under cold water.

4        Mix the pasta with the pesto and transfer to one large or four individual ovenproof dish(es). Sprinkle the breadcrumbs and pecorino over the pasta and bake for 15 minutes or until brown on top.
