Pasta with butternut and bacon

Serves 4

500 g butternut, cubed 2 cloves of garlic, chopped 1 onion, chopped 30 ml olive oil 30 ml fresh oregano salt and freshly ground black pepper 250 g bacon, diced 60 ml pesto 80 ml mayonnaise 250 g penne pasta

Preheat the oven to 200 °C. Spread the butternut, garlic and onion evenly in a roasting tin.

Drizzle with olive oil and scatter the oregano on top.

Fry the bacon in a saucepan until crisp and done.

Add the pesto and mayonnaise and mix.

Cook the pasta in salted water until al dente, drain and transfer to a large bowl.

Combine the butternut and bacon mixtures.

Spoon on top of the pasta and toss.
