Pasta with chicken and vegetables

With pasta around, there's always a fabulous meal waiting to happen

Serves 4-6

Preparation time: 10 min

Cooking time: 20 min

250 g penne pasta

salt and freshly ground black pepper

30 g butter

4 chicken breast fillets

5 ml (1 t) Cajun spice mix

1 red onion, sliced

2 carrots, chopped

250 g mushrooms

½ red pepper, cubed

15 ml (1 T) flour

250 ml (1 c) chicken stock

125 ml (½ c) grated Cheddar cheese

150 g spinach, chopped

1    Cook the pasta in boiling salted water according to the packet instruction. Drain, rinse with cold water and set aside.

2    Melt the butter in a saucepan over medium heat. Add the chicken, season with the Cajun spice mix and cook for 2 minutes. Add the onion, carrots, mushrooms and red pepper and cook for another 2 minutes.

3    Stir in the flour until well mixed, pour in the stock and cook, stirring, until slightly thickened, about 10 minutes. Add the cheese and season with salt and pepper.

4    Mix in the pasta and spinach and cook until the spinach has wilted.
