Pasta with vegetables

Perfect for Meatless Mondays and every other day of the week. Quick and easy to make and very tasty too!

Serves 6

Preparation time: 5 min

Cooking time: 15 min

225 g tagliatelle pasta

250 ml (1 c) frozen peas

45 ml (3 T) olive oil

4 garlic cloves, sliced

40 g cherry tomatoes, halved

salt and freshly ground black pepper

handful of fresh basil, torn

handful of fresh parsley, chopped

60 ml (¼ c) Parmesan cheese shavings

1 Cook the pasta according to the packet instructions. Add the peas for the last 2 minutes of cooking. Drain when done.

2 Heat a large frying pan over low heat and add the oil and garlic. Cook for 5 minutes or until the garlic begins to brown.

3 Increase the heat to medium, add the tomatoes and cook for a minute. Add cooked pasta and stir in the fresh herbs.

4 Sprinkle with the cheese and serve.
